I am a trainer but i also sell things like services nd so forth.
You can invoice for both types of items at the moment.

If you go into Sales >> Invoice Customisation you can set an account level default so that any new invoices will automatically appear with either a time based entry or a item based entry.

You can also add a mix of time and unit entries on a single invoice. When you click ‘Add New Line’ when composing a new invoice, you’ll have the option there.

You can’t set default preferences for specific clients though only account level defaults.
