How do I make a bad debt posting?

If the invoice is more than six months old there should be an option to mark it as a bad debt, if less than that then I’m not sure.

HMRC don’t consider a debt that is less than 6 months overdue to be unrecoverable.
A few years ago I had a problem with writing off invoices that had been part paid. I don’t know of that has been resolved.
