Is it possible for the dashboard Sales and Purchases chart/table to show more than just the General Sales nominal code total ? I have created some custom Chart of Accounts nominal codes from 4001 to 4005. I can’t see how, if it is possible, to include the totals from those codes in the amounts used in the dashboard Sales and Purchases chart/table.

It is not possible to break down the Sales and Purchases charts/tables by other profit an loss codes as these balances are not taken from the item lines but the total outstanding on the invoices.
You can add additional balance sheet codes to the main dashboard (such as bank accounts) by adjusting the below setting in the Account Settings > Advanced Settings screen but these are balance sheet codes only
