One of the directors has left the business. His loan account balance has been repaid in full so zero balance. Can I delete the account from QF, or does it have to remain to cover historical transactions?

It would remain in the accounts as it contains transactions.
You can hide it in the banking screen if that helps
Banking > Options > Sort/Hide accounts
Select options next to the account > Hide Account
Options > Show Filtered List
