How do I edit Dates or amounts once it has been marked as paid in purchase payments section

You can’t change the payment date or amount directly, you would need to delete and re-enter the payment.
i put the wrong date in by mistake for the payment
it would throw all the ref numbers out if i delete it
prob best just to leave as it is ?
It doesn’t get permanently deleted, it just gets marked as deleted. The ref. numbers shouldn’t be affected. With the wrong payment date your bank will be incorrect.
