I have set the itemised area on Invoice styles to '‘Time on a project’ and now wish to set my latest invoice style to ‘unit based items’. It looks like this will this change all of my previous invoices to ‘unit based’ items too, which I don’t want to do, is this correct?

No it won’t change your previously issued invoices. It will just affect the layout for any newly created invoices.
Whichever preference you use you can always create item based, time based or mixed by just adding lines here on the invoice composer.
