Having deregistered from VAT and ticked the relevant button on Quickfile, I find that on my invoice, although there is no VAT added, when in preview the VAT column on the invoice remains (item/description/unitcost/Qty/VAT/Total). I am concerned about amending the template as this seems to have the effect of changing previous invoices. Is there a workaround??

When you customise one of the standard designs a custom design is created
In your case you are using the Modern design, you have at some point tried to amend this resulting in the Modern Custom design as shown below.
When you preview a design this is flagged as the default and will be used for all invoices (including previous ones). You can however preview old invoices and choose which ever design you wish.
