Is there any way of seeing the VAT figure owed to HMRC at any point?

Do you mean how much would be owed as of your next return, or how much was owed as of a particular date?
How much is owed is owed as of a particular date. I like to keep account at the end of a month how much vat I owe to HMRC so that I can get a more accurate figure of my bank figure.
If you were to create a VAT return (but not submit it), this would give you the balance as of today based on the settings (cash or accrual for example). It’s not possible to view this as of a previous date unfortunately.
What you could view however is the figures in your tax control accounts. If you were to set the date range from, for example, 01/01/2000 to the date you want to view, this would show you the total figure (and you could calculate it from there). However, if you’re on cash accounting, this figure would differ slightly.
No problem I was afraid to click on Create a vat return in case it locked the month or something.
As long as you don’t save or submit it then no locks will be created
Or just look at your balance sheet for the relevant date - “VAT liability” shows any amount from a finalised VAT return that hasn’t yet been paid to (or refunded by) HMRC, and the difference between “sales tax control account” and “purchase tax control account” balances gives you the accruals basis running total for the current quarter.
