Can some explain to me why after successful tagging, my latest entries have a red cross beside them and the older entries have a greyed out cross. Are the grey ones from the prior tax year?

Yes, I think you are right. When you do the year end process it will look the year and the years before that. That means you can not change the entries in that year (those years) anymore. Please see below:
"Year End Journals

Select an accounting year below and this tool will automatically prepare the year-end journals to move the profit and loss totals to the balance sheet.
After submission the selected accounting year and any previous periods will be locked from editting."
For the entries in that year (those years) the cross will change to grey - you can not delete/change it.
