Undo End of Year

Can someone remind me how to undo an end-of-year process?

The year end process, creates a journal and increases the lock date.

You would need to reverse this by deleting the year end journal in the Reports > Journal screen and change the lock date back a year in the Account Settings > Account Lock date screen.
