Is it possible to change or add sub-categories for both sales & Purchases?

Yes, you can create new nominal codes from the chart of accounts page. But there may be other ways to achieve what you want, such as using project tags.
You can add up to 9,500 nominal accounts (approx), although we don’t support sub-accounts. Depending on what you’re trying to do project tags may be a better fit.
