Is it possible update terminology and format
I.e Sales Inventory - to - Services or Servies/Stock
Estimates to quotation
View payment to Sales payments (clearer what it is)
and this would be really cool if the dropdown menus were alphabetical. So much easier on the eye.

It’s not possible to change the name of the Sales Inventory, but it is possible to change some of the others.
For example, estimates can be changed in your invoice customisation (see here), and “payment” can be used by going to Account Settings >> Advanced Features:
