can I change the “Due Date”?

Yes you can
The invoice due date can be edited when you create an invoice, but how depends on your account settings.
Paying within x days
The one option is to specify the number of days you’re allowing for the payment, which appears like this:
Due Date
Or you can set it to accept an actual date for the payment to be made:
This can be changed by going to Sales >> Invoice customisation, clicking on the due date box which allows you to enable it on the right hand side:
