Can anyone tell me how to change the year-end date to 6 days ago (31/1/2026). I forgot to do it last week, and now the system won’t let me put in a date that has already passed.

Set it to 31/1/2027 as this would be your “Next Year end date”
When you run the year end process it would give your the option to close 31/1/2026 (as it would not detect the year end journal).
