I have changed my default email address in Account Settings - Routine Emails, however, invoices are still being sent from my log-in email address, how do i change this?

How long ago did you change the email address in the Routine Emails section? It should update pretty quickly, but there may be a slight delay.
Can I also confirm that you are using the QuickFile mail servers rather than your own SMTP email server?
