if you setup quickfile as a sole trader, can you then change it to a ltd company a few weeks later and adjust any dates and still keep all the account details that you have put in etc?

Unfortunately you would need to set up a new account for the limited company. This is because a limited company is a separate legal entity from a sole trader and everything should be kept separate.
could i setup a quickfile for a new ltd company, before the company is registered so i can get it all setup and ready with all stuff added to it, then just adjust the dates and company name once its registered?
Depend what all the stuff added to it means. A Ltd company doesn’t exist until its incorporated so if you mean nominal codes that’s fine. If you are referring to assets, stock, purchases or sales then no.
