It’s not possible to specify weeks unfortunately, only days. What you could do is enable direct date entry, enter this and add a comment/note stating that full payment is due x weeks before the booking.

To enable the direct date entry, you must enable this option first (Account Settings > Invoice Customisation)

Then when it comes to creating the invoice, you can enter the date directly:
