It is my second year for accounts & tax submission for my company. My company start date was Sep 30, 2020. I am wondering about how could I define the start date as 01-Oct-2021 and end date as 30-Sep-2022 for the balance sheet report.
Any help on this topic will be much appreciated.

You should be able to set a date at the top of the page
Set the Date to 30/9/22 and the quickfile will show the 12 month before that date.

Profit and loss is for the period and Balance sheet is as at the day usually last day of P&l report
A balance sheet doesn’t have a start date, it is by definition a snapshot of account balances at a given date rather than a record of account activity between a pair of dates.
If you want to see the total net movement on each account over a period ignoring the opening balance at the start of the period then you need the chart of accounts rather than the balance sheet. Or the trial balance report combines both, giving you opening balance, net movement and closing balance on each nominal.
For a year where you’ve run the year end procedure all your P&L nominals will show zero on the trial balance because any activity during the year was cancelled out by the year end journal. The P&L report has a special case to ignore the effect of the closing journal when you look at prior years but the other reports do not.
