For some reason (am sure it may be obvious) but when I come to print or save my invoices as a PDF they are split partway through the invoice. Its fine in Preview just in Print/Save mode.
Are these invoices particularly long? Could it be that they run over more than one ‘piece of paper’?

No not at all. They should easily fit on one page, with more space for additional items.

It may be that you’ve ticked the box to add a line break after the item.
If you go to modify the invoice and click the cog on the line before the break check to see if you’ve ticked to add a page break:
