I’ve been trying to follow the knowledge base instructions for picking a new invoice template but I don’t seem to be able to find them in my dashboard.
Have they been removed?

Are you referring to the templates for trading styles or the invoice gallery styles?

If you go into preview the invoice you’re wanting to change there should be the little green box in the top left that will bring up the style gallery

The invoice customisation that you are looking at there relates to the invoice templates for the trading styles.
If you are just wanting to change the look of your invoices then you do this once the invoice is created. Open up the draft invoice preview and you should see the green box at the top:
