Invoice sent is marked as having been ‘viewed’ (several times on different dates!) ,but the client denies receiving it. This means I can’t rely upon the status symbols such as ‘viewed’ as evidence of receipt?

The invoice view event is logged when the unique link is loaded. If someone (including an automated script) loads the link, we will ask them to verify the request before viewing it.
