Working with Freelancing Platforms

I have worked with several freelancers across platforms like Upworks and Elance. These platforms are like brokers between businesses and freelancers. Would I create my purchases with the Freelancer as the ‘Supplier Name’ or or 'Upwork"?

Same goes with the receipts.
