Write Off Partially Paid Invoice to credit fees

How Do I write off payments unpaid. I use Stripe and their fee is taken away before payment. I would like to show this as an expense.

The difference with Stripe however, is they actually issue an invoice for their fees, so they should be treated like any other supplier and the fees accounted for when the invoice is issued.
